A block bottom bag has a square base, so it stands up on its own while someone fills it with one hand. That single detail is why counter staff prefer it over a flat paper bag when service is quick.
Because the bag is filled at the counter and carried a short distance, it is usually ordered without handles, in kraft, with a simple printed logo. Larger sizes take a twisted handle if the order leaves the building.
